In a mixing bowl, add buttermilk, garlic, ginger, salt, pepper, chicken and mix everything together.
Cover with saran wrap and marinate for 15- 20 minutes.
After 15-20 minutes, drain excess liquid.
In another mixing bowl, add flour, paprika, chili powder (optional), salt, pepper.
Dump this flour mixture into the chicken bowl and mix until all chicken pieces are coated.
Roll each chicken piece in a bowl of crushed cornflakes and place it on a cookie tray, lined with parchment paper.
Bake at 400 degrees for about 15 minutes.
While the chicken is baking, prepare the honey sriracha sauce: Add ketchup, sriracha sauce, vinegar, honey, garlic powder, onion powder in a non-stick sauce pan and cook on medium heat until bubbling.
Place the crispy baked chicken bites in a large bowl and pour as much or as little honey sriracha sauce, as you like. Toss until fully coated.
