Carnitas Stuffed Peppers:
Ingredients

  • 4 red bell peppers, hollowed out and top removed

For the Pork

  • 1, 3 pound pork shoulder
  • 1/2 tablespoon coarse sea salt

For the Plantains

  • 2 plantains, cut into 1-inch cubes
  • 1 teaspoon extra virgin olive oil
  • 1/2 teaspoon coarse sea salt

For the Mojo Sauce

  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon sea salt
