Gluten Free Chocolate Sandwich Cookies:
Ingredients
For gluten free cookies:
- 2 cups (250 g) gluten free flour
- 7/8 cup (100 g) powdered sugar
- 1/2 tsp xanthan gum
- pinch of salt
- 1 stick + 1 tbsp (125 g) cold unsalted butter, cut into cubes
- 2 egg yolks
- 3 - 4 tbsp cold water
For dark chocolate ganache:
- 7/8 cup (200 g) heavy/double cream
- 6 1/4 oz (175 g) dark chocolate, chopped
For dark chocolate drizzle:
- 2 1/2 oz (75 g) dark chocolate, chopped and melted with 1/2 tbsp coconut oil
